Is it possible to setup alerts only if x amount of sensors fail?

I'm afraid this is not possible. However, you can configure a latency for notification triggers. Using the latency setting, notification will only be triggered when the causing condition still exists after x seconds.

Take a look at Custom Sensor SensorCount. This sensor counts the number of sensors with a specific state (up, down, warning,...). In the channels tab you can set up this sensor to go into a error state if for example more than 10 sensors are down.
